From a spark of an idea to bring decent, hot, affordable street food to the late night dwellers of the Mission ignited a full blown street food scene! The master plan was just to make a little extra cash, have some fun and fill a niche that hadn’t been filled. Two years later and Street Food is a main stream food option in the Bay Area! There are now carts, trucks, festivals, underground markets and all kinds of developing food businesses. It’s a thrill to see what has emerged from a chance taken and a dream listened to.

For us, on the Magic Curry Kart Express, it has been a rich and dynamic ride, revealing so much more of the city, the bay and the stuff that lies within. Career change, community building, business ventures, new relationships, culinary growth, food for the soul, food for the body, farmers, eaters and the threads that weave it all together… these are the things that we are reflecting on. And this is what we’d like to share with you.

About Chef: DOMINIC AINZA

“I’m just a cook,” Chef Dominic Ainza simplifies, but behind his humility is an intensely creative passion for food and a strong ambition to elevate the cuisine that is closest to his heart.

What sets Chef Dominic apart is experience, accolade and vision. As a graduate with honors at the California Culinary Academy in San Francisco, he is classically trained in French techniques. Prior to opening mercury appetizer bar in the Marina, now mercury lounge in the SOMA, Chef Dominic has been a force behind numerous award winning kitchens. After graduating from CCA, he joined the kitchen of Betelnut, in San Francisco (a top 100 restaurant). He worked closely with Executive Chef Alex Ong and sous chef Daniel Sudar and deepened his understanding of the pan-asian cuisine and working a high volume restaurant kitchen. He then took a position as opening sous chef for Poleng Lounge in San Francisco w/ Executive Chef Tim Lum. Poleng Lounge, a contemporary Pan-Asian restaurant with strong Filipino influence earned 3 stars from the SF chronicle, as a Top 100 Restaurant in their first year of operation. “Dom has been a huge influence on me,” says Chef Tim.

He then moved on to become opening Sous Chef at Red Lantern in Redwood City, a recommended restaurant in the Michelin Guide. There, he reunited with Daniel Sudar, now Executive Chef of Red Lantern.

Chef Dominic’s cuisine doesn’t just represent tradition, just as his cultural background is a colorful quilt, his cuisine is intricately woven with the best of the Bay Area’s culinary cultures that should be enjoyed by people from all backgrounds.

In the spring of 2009 on a back alley in the Mission District of San Francisco a renegade street food cart was born sparking a chain reaction that led to a revival of mobile food in the Bay Area. Armed with smart phones and motivated by a tough economy; the Magic Curry Kart and a handful of entrepreneur mobile food vendors took to the streets serving up delicious food while at the same time spreading the word through digital "word of mouth". A city known for being tech savvy and zealous for delicious food welcomed this new trend with open arms. Two years later and Street Food is a main stream food option in the Bay Area! There are now carts, trucks, festivals, underground markets and all kinds of developing food businesses.

Get Street Smart:
Cooking with San Francisco's Top Street Chefs

A city renowned for its zeal for delicious food has experienced a revival of street food in the last couple of years. Fueled by a tough economy, many took to the streets with their special recipes to express their creative culinary skills using social media to promote themselves. Now these chefs will be sharing a some of their secrets in a new cooking series, Get Street Smart, produced by the Mission's own Magic Curry Kart. These classes will be held at the Mission based non-profit community kitchen, La Cocina. This special organization has a beautiful incubator program in which they support, mentor and develop small food businesses that are run by low income mostly immigrant women.

The Get Street Smart cooking classes will cover basic skills and will be hands on with class sizes of 15-20 people and culminating in an intimate group meal. See the list of chefs or the course calendar to find what works for you. Classes will be held on Monday evenings from 7-9pm.

Paawan Kothari - The Chai Cart and Green Corriander

Paawan Kothari started The Chai Cart in the summer of 2009. With a background in Marketing and a love of the food and flavors of her native India, Paawan decided to bring the authentic flavors of Chai, as she knows them, to the streets of the Mission.

Course offerings:
Art of Chai - An introduction to chai, its cultural roots and a cooking lesson on making chai from scratch - 3 different ways. Once you have the basics down, I will also show you how to play with different spices to make your own blend of masala chai.

Sprouts and Potato "chaat" - "Chaat" is common term used for Indian street foods. They are basically savory small plates that is often eaten in the afternoon/evening before dinner. They are many variants and in this class we will make a chaat with fried wheat chips, potatoes and green spouts smothered with yogurt and chutneys.

Julia Yoon, opened the Korean taco truck, Seoul on Wheels back in 2007. Influenced by her Orange County roots, Yoon learned to cook from chef Myung Lee who helped her develop her sauce recipes.

Dontaye Ball's passion for food was ignited when he was just 8 years old, in the kitchen with his grandmother. He started with cakes and cookies then moved on to roasting meat. In high school he got his first job washing dishes at a senior living home. After high school he attend CCSF culinary arts program then spent some time in Europe. Soon after his work at Delfina + Delfina Pizza + Spork + Presidio County Club + Google + Contigo + Good Foods = "damn good chef"!

Dontaye founded Good Foods Catering in 2002. Good Foods focusus on using local products made by local people. They specialize in California-Mediterranean seasonal cuisine. As a company they have made their way by catering for company lunches, small dinner parties, food and wine pairing, and cooking classes for family. They have a line of spice rubs and skin care products for chefs. You can find Good Foods at the local Alemany Farmers' Market in San Francisco every Saturday. They sell preserved lemons, pickled vegetables, pulled pork sandwiches and much much more!

About YMCA Beacon:
Located at John Muir Elementary School, Raoul Wallenberg Traditional High School and Hayes Valley Residential Complex, the Western Addition Beacon Center (WA Beacon), an entity of the Buchanan YMCA, provides quality after-school programming for youth and also serves as a community center addressing the specific needs of the Western Addition community. Their mission is to enrich the lives of community members and to ensure the healthy development of young people. They offer AM Care, a wide array of lunch time and after-school programming, including academic support, college preparation, computer and media technology, cultural arts and events, recreational activities that foster mental and physical health, and referral based case management. They also recognize the importance of family and adult services and work to serve the entire community. The Beacon strives to inspire youth and uplift the community through our ability and willingness to address the most critical community needs.

The WA Beacon serves over 600 youth and families annually; focusing on project based learning, academic alignment of educational standards and behavior management techniques through artistic expression and exploration. Through their many partnerships (WA Family Resource Center, Urban Services YMCA Truancy Intervention Program, YMCA of San Francisco’s Youth & Government Collaborative, Mo Magic, Community Partners United, Kaiser’s Gate Way to Fitness Program, New Day for Learning, and Handful Players), the WA Beacon is able to holistically meet the needs of the youth and families we serve.

About the EXCEL Afterschool:

A comprehensive After-school Program for the SFSUD. This programs offers academic support, as well as, enrichment opportunities for the youth of John Muir elementary school. The program operates Monday thru Friday from 2:40 p.m. until 6 p.m. During this time the structure of the program consist of designated homework time immediately following dismissal until 4 p.m. . This time period also allows group leaders to provide additional academic support. From 4 p.m. through pick-up, John Muir youth are allotted the opportunity to select enrichment activities from a list that consist of a wide spectrum of interest areas including the arts, physical activities, additional academic support. Enrichment activities for the 2009-10 school year include:

Handful Players; Theater/Drama program
SCORES; Soccer, Poetry, and Service Learning Empowerment program
Tree Frog Treks; Interactive science program
SF P.A.L; Basketball
Gardening
Boy/Girl Scouts

Red Curry Sauce

Make a quick and delicious meal with this tasty sauce.

Basic Red Curry (serves 6-8)

What you'll need...

1 jar Magic Curry Sauce (Red)
16 oz Water or stock (less for thicker sauce)
~2 c chopped vegetables (carrots, broccoli, bell peppers, green beans, summer squash or any of your favorite vegetables)
1 1/2 pound of tofu, chicken or prawn*
2 T oil

In a wok, stir-fry chicken* in 2 T of oil. Stir-fry for 5-6 minutes or until cooked. Add 1 jar Magic Curry Sauce, an equal amount of water or stock and vegetables. Simmer until vegetables tender. Serve over rice and enjoy!

Green Curry Sauce

Basic Green Curry (serves 6-8)

What you'll need...

1 jar Magic Curry Sauce (Green)
16 oz Water or stock (less for thicker sauce)
~2 c chopped vegetables (carrots, broccoli, bell peppers, green beans, summer squash or any of your favorite vegetables)
1 1/2 pound of tofu, chicken or prawn*
2 T oil

Red Curry Paste

Use this fresh and spicy green curry paste to make a dinner your friends and family will love! It's quick and delicious.

Recommended use...

Basic Red Curry (serves 4-6)

What you'll need...

3 T Magic Curry Paste (Red), add more paste for spicy palettes!
1-2 c chopped vegetables (carrots, broccoli, bell peppers, green beans, summer squash or any of your favorite vegetables)
1/2 pound of tofu, chicken or prawn*
1/2 T oil
1 can Coconut milk (13.5oz)
Water or stock (13.5oz)
1 1/2 t Sugar**
2 T Fish Sauce, alternately you can use 1/2 t Salt

In a wok, heat 1/2 T oil and 1 T Magic Curry Paste for 1 minute. Then add 1/2 pound of chicken* and stir fry on medium heat until well saturated with paste (5-6 minutes). Add another 2 T of paste, 1 can of coconut milk, an equal amount of water or stock and chopped vegetables and simmer for 3-4 minutes. Add 2 T Sugar & 2 T Fish Sauce (or 1/2 t salt) and stir. Serve over rice and enjoy!

**We've substituted the sugar for 1 T of Maple Syrup and it was delicious!

What you'll need...

3 T Magic Curry Paste (Green), add more paste for spicy palettes!
1-2 c chopped vegetables (carrots, broccoli, bell peppers, green beans, summer squash or any of your favorite vegetables)
1/2 pound of tofu, chicken or prawn*
3/4 c Peanut butter
1/2 T oil
1 can Coconut milk (13.5oz)
Water or stock (13.5oz)
1 1/2 T Sugar**
2 T Fish Sauce, alternately you can use 1/2 t Salt

In a wok, heat 1/2 T oil and 1 T Magic Curry Paste for 1 minute. Then add 1/2 pound of chicken* and stir fry on medium heat until well saturated with paste (5-6 minutes). Add another 2 T of paste, 1 can of coconut milk, an equal amount of water or stock, 3/4 c peanut butter and chopped vegetables and simmer for 3-4 minutes. Add 1 1/2 T Sugar & 2 T Fish Sauce (or 1/2 t salt) and stir. Serve over rice and enjoy!

**We've tried this recipe with 1 Tbsp Maple Syrup instead of sugar and it was delicious.

Use this fresh and spicy green curry paste to make a dinner your friends and family will love! It's quick and delicious.

Recommended use...

Basic Green Curry (serves 4-6)
What you'll need...

3 T Magic Curry Paste (Green), add more paste for spicy palettes!
1-2 c chopped vegetables (carrots, broccoli, bell peppers, green beans, summer squash or any of your favorite vegetables)
1/2 pound of tofu, chicken or prawn*
1/2 T oil
1 can Coconut milk (13.5oz)
Water or stock (13.5oz)
1 1/2 T Sugar
2 T Fish Sauce, alternately you can use 1/2 t Salt

Often time it has been difficult for to make space or time to reflect on the trajectory my life has taken. Its so easy to get caught up in whatever seems to be the most important or urgent at the time. Now that I'm on the east coast traveling I am going to try to write about where I've come from and hopefully that will help me see the direction that i'm heading clearer.
